Fruit-Filled Coconut Nests


Makes about 20 nests

14 oz. sweetened shredded coconut

½ cup all-purpose flour

⅛ tsp. salt

14 oz. sweetened condensed milk

Darbo strawberry fruit spread

Darbo apricot fruit spread

Mini milk chocolate eggs, optional


Preheat the oven to 325°F and line a baking sheet with parchment paper. In a large bowl, mix the coconut, flour, and salt. Stir in the sweetened condensed milk and mix well. Roll about 2 Tbs of the coconut mixture into a ball and place it on the baking sheet. Repeat with the remaining coconut mixture. Flatten each ball with your hands and press your thumb in the center to create a well. Bake the nests for 15 minutes and let cool completely. 

Once the nests have cooled, spoon about ½ Tbs Darbo fruit spread into each well and garnish with mini chocolate eggs.
